Okra Care Guide

A member of the hibiscus family, okra has one of the most beautiful blooms in the vegetable garden. Okra is used as a natural thickener for soups and stews and is often used as a main ingredient in gumbo.

About This Plant

Okra is considered a “southern” crop because it thrives in hot weather. However, okra can be grown anywhere, although it bears most abundantly in regions with long, hot summers. Okra is often stewed with tomatoes, deep fried, pickled, boiled or steamed and served with butter, as well as eaten raw, fresh from the garden. Some folks don’t like okra’s gummy quality when it’s boiled or steamed, and it seems to be more popular when combined with other vegetables, fried or pickled.

Site Selection

Select a site with full sun, preferably on a southern slope for maximum warmth, and well-drained soil. Prepare the garden bed by using a garden fork or tiller to loosen the soil to a depth of 12 to 15 inches, then mix in a 2- to 4-inch layer of compost.

Planting Instructions

In warm regions, plant okra directly in the garden when the nights stay above 55 degrees F and the soil has warmed to 65 degrees F to 70 degrees F. In northern areas, start seeds indoors in peat pots several weeks before the soil warms up. Or direct seed through black plastic and cover the rows with plastic tunnels to hold in the heat. To hasten germination, soak seeds overnight in tepid water or freeze them to crack their coats. Sow seeds 1/2 to 1 inch deep, 3 to 4 inches apart. Set out transplants to stand 1 to 2 feet apart in rows 3 to 4 feet apart.

Care

When the seedlings are about 3 inches tall, thin to stand 1 to 2 feet apart. Provide at least 1 inch of water per week; more in hot, arid regions. When plants are young, cultivate lightly to eliminate weeds. Mulch heavily (4 to 8 inches) to keep weeds down and conserve moisture. Side-dress plants with rich compost. Side-dress three times: after thinning, when the first pods begin to develop, and at least once midway through the growing season. Contact your local Parish/County Extension office for controls of common okra pests such as flea beetles.

The first pods will be ready in 50 to 60 days. Harvest the pods when still immature (2 to 3 inches long). Pick at least every other day to encourage production. Wear gloves and long sleeves to avoid coming in contact with the irritating spines on the leaves and pods. Use a knife to cut the stem just above the cap.

2016 Cajun Hot Sauce Festival

Some like it hot…

…especially us Cajuns! Here in Acadiana, everything is hot. The climate, the music, and especially the food! When it comes to Cajun food, the spicier the better.  

So there’s no question why Acadiana hosts its very own hot sauce festival each year. Since 2000, the Cajun Hot Sauce Festival has attracted tens of thousands of attendees – the 2015 Festival alone brought in nearly 12,000 heat-seekers from across the country! The 2016 installation is expected to draw an even larger crowd.

There’s plenty of fun to be had: live music will be played throughout the weekend, hot sauce companies from around the world will be sampling their sauces, the very best local chefs will be competing in the jambalaya cook-off, patrons will put on their dancing shoes for a dancing contest, and carnival rides will be open for kids of all ages to enjoy!

The Cajun Hot Sauce Festival is held at the Acadiana Fairgrounds in New Iberia. Saturday admission is $10 and Sunday admission is $5. Kids 12 and under get in free!

Calling all gardeners!

Family Promise of Acadiana will be hosting its 10th annual Southern Garden Festival on Friday, April 15 and Saturday, April 16, at Harold & Sarah Schoeffler Gardens.  Even if you don’t have the greenest thumb, you’re still welcome to join in on a weekend full of outdoor fun!

It all starts Friday from 6 PM to 8 PM, a night of dining and dancing under the stars.  Patrons will enjoy a delicious Cajun inspired meal, live music provided by the Nouveau String Band, a silent auction with great items up for bid, and art demonstrations.  Click here for reservations.  Your ticket will also cover Saturday’s admission.

butterflySaturday has a full slate of outdoor activities.  Master gardening sessions will be held for those who want to learn more about medicinal plants, container gardening, and butterfly gardens.  Local artists and exhibitors will be showcasing their work, ranging from clothing and accessories to woodworking and home decor.  For the kids, there will be a maypole dance, a scavenger hunt, and hat weaving!  Live music throughout the day will feature local bands and Gospel choirs.

The Saturday festival lasts from 9 AM to 5 PM.  Tickets are $10 at the garden gate.  All proceeds will benefit the families served by Family Promise of Acadiana, an organization whose mission is to provide shelter to Acadiana families in need.

Stuffed Steak Rolls

These stuffed steak rolls somehow look both fun and sophisticated at all at once!  These little things are packed with flavor–grilled onions and mushrooms, fresh baby spinach, and buttery provolone cheese all wrapped up in a savory steak spiral.  And would you believe that they take less than 45 minutes to make?  Believe it!  All it takes is a few minutes of searing and the oven will take care of the rest.  Pair it with a full-flavored Merlot and serve with a side of grilled asparagus and creamy mashed potatoes.

  • 2 tablespoons canola oil, divided
  • 3 tablespoons chopped garlic
  • 2 sweet onions, chopped
  • 2 cups mushrooms, thinly sliced
  • ½ tablespoon kosher salt
  • ½ tablespoon freshly ground black pepper
  • 2 pounds flank steak
  • Kosher salt
  • Freshly ground black pepper
  • 1 (4-ounce) package baby spinach
  • 9 slices provolone cheese

PREPARATION

  1. Preheat oven to 350°F.
  2. Heat one tablespoon of oil in a pan over medium-high heat. Combine garlic, onions, mushrooms, salt, and pepper in pan and cook until almost all of the moisture has evaporated and onions are caramelizing, 15–20 minutes. Remove from heat and set aside.
  3. Lay flank steak on a cutting board. Spoon mushroom and onion mixture on top, spreading it evenly across the steak. Sprinkle spinach on top, followed by slices of provolone. Press down lightly to compress the spinach. Starting at the bottom of the flank steak, roll it up tightly, making sure the grain of the meat is running horizontally. Use six toothpicks to secure steak roll. Slice the steak roll into six equal rolls.
  4. Heat remaining oil in a pan over high heat. Sear steak rolls on one side for one to two minutes, then flip. Sear second side for about one minute, then bake for 10–15 minutes, until medium rare.
  5. Remove toothpicks and serve.
