Wine Down Wednesday – Buffalo Chicken Tacos

Who doesn’t love a bit of heat in their dinner every now and then?  For me, buffalo sauce is always my go-to for adding a little kick (or a lot) to my food.  So when I stumbled upon these buffalo chicken tacos, I couldn’t resist sharing them all with you!  They’re so delicious and easy to make, plus they can be personalized with whatever toppings you like.  You can make these with normal flour tortillas, or throw everything into a taco bowl.  Either way, this recipe is definitely a crowd pleaser–perfect to serve at your next gathering!  Pair it with a semi-sweet Riesling.

Buffalo-Chicken-Tacos-3INGREDIENTS:

  • 1 (15-ounce) can whole kernel corn
  • 3 cups shredded cooked chicken
  • ⅔ cup buffalo sauce
  • 1 package small flour tortillas or taco bowls
  • 4 cups shredded Romaine lettuce
  • 1 avocado, peeled, pitted and diced
  • ½ cup blue cheese dressing
  • optional toppings: extra crumbled blue cheese, chopped fresh cilantro, thinly-sliced green onions, fresh lime wedges

DIRECTIONS:

Heat a skillet over high heat. Add the corn kernels and let them dry-roast for about 6-8 minutes, stirring occasionally, until their edges begin to brown and caramelize. Remove from heat, and transfer the corn to a separate plate.  Set aside.

In a mixing bowl, toss chicken and buffalo sauce until combined.  Set aside.

To assemble the tortillas, place your small tortillas (or taco bowls) on a flat work surface.  Portion the lettuce evenly between the tortillas.  Then top each tortilla with an even portion of the chicken, corn, and avocado. Drizzle each with the blue cheese dressing, then sprinkle on optional toppings if desired

Serve immediately.

Rhythms on the River – Chubby Carrier and the Bayou Swamp Band

Are you ready for Rhythms on the River?  The seasonal, six-week concert series is hosted every Thursday evening in River Ranch Town Square, providing Lafayette residents with a FREE musical experience, featuring performances by some of Louisiana’s most popular artists and groups.

Last week kicked off the Rhythms on the River Fall 2015 Series with the Chee Weez, a cover band native to New Orleans, LA.  The Chee Weez have been known to perform at nearly every major Louisiana festival, and their shows are quite an experience!

Rhythms on the River continues this evening with Chubby Carrier and the Bayou Swamp Band.  Born and raised in Churchpoint, LA, Chubby Carrier was destined to play music.  He is the third generation of a family of musicians, all regarded as legends of the genre of zydeco music.  He joined his father’s band at the age of 12, where he played the drums.  By the age of 15, he had picked up the accordion.  At 17, he was touring the world with the famous Terrance Siemien.

In 1989, Carrier formed his very own band, The Bayou Swamp Band.  Since the group’s inception, they have produced over 10 albums and have toured all over the US and even in Canada, Europe, and North Africa.  

In 2011, the Bayou Swamp band received a Grammy award for Best Zydeco or Cajun Album with their then latest album “Zydeco Junkie”, drawing major attention to the Louisiana zydeco scene.  Later that year, Carrier was inducted into the Louisiana Music Hall of Fame.

The Bayou Swamp Band are advocates for good zydeco music as well as a plethora of other causes, particularly children’s causes and education.  The band proudly supports the Boys & Girls Club of Acadiana, for whom they’ve held concert fundraisers to benefit.  In an effort to expose the younger generation to zydeco music, the band teamed up with the Acadiana Symphony and Conservatory of Music to launch the Zydeco from A-Z project, where Carrier himself provided instruction on the history of zydeco and even gave lessons on various zydeco and Cajun instruments.  

Carrier is also an advocate for the Let’s be Totally Clear Campaign, a movement with the purpose of promoting a smoke-free environment; he has also been featured in two documentaries, “Zydeco Breakfast” and “Hurricane on the Bayou”, both aimed at increasing tourism in Acadiana.

It’s no secret that Chubby Carrier and the Bayou Swamp band are just as dedicated to the advancement of Acadiana as they are to their music.

Eat Lafayette – Dean-O’s Pizza

Since 1971, Dean-O’s Pizza has been a family owned and run pizza parlor dedicated to serving “pizza like no other” to the people of Lafayette.  The local restaurant has come a long way since its small beginnings.  Over the years, the menu has grown, and with it so has its number of loyal customers.  

Despite the expansion of the restaurant, including the addition of another Dean-O’s location, the quality and high standards on which the restaurant was founded have not been lost.  All of Dean-O’s dishes are still made using made-from-scratch sauces, seasoned with a patented blend of spices.  Only the freshest and top-quality meats, seafood, produce, and cheeses (which the Dean-O’s staff grates and blends themselves) are allowed into Dean-O’s recipes. And for a crispy, delicious crust, Dean-O’s restaurants use traditional brick ovens to cook their pizzas.

In addition to its extensive menu (really, it’s huge), Dean-O’s always offers rotating lunch specials and monthly pizza specials.  What’s great about these specials, however, is that they’re actually always available!

Take, for instance, the Cajun Samurai, the pizza of the month for August.  A truly unique pizza topped with fried shrimp glazed in yum-yum sauce, green onions, chow mein noodles, and Parmesan cheese, this “special” can be ordered year-round by those who request it.

This also rings true for the Mardi Gras po’boy–a French roll filled with ham, turkey, Swiss cheese, lettuce, tomato and honey mustard.  It isn’t just available during Carnival season!

Tim Metcaff, owner of Dean-O’s, always puts his customers first, which is why he will gladly allow an “off-menu” item to be ordered for the sake of happy and loyal customers.

It’s obvious that Metcaff and his wonderful Dean-O’s staff take pride in their work.  No other pizza parlor in Lafayette serves “Italian food with a Cajun flair” just as well as Dean-O’s does.  Excellent quality and service that can only be found at a family owned and run restaurant are guaranteed with each and every visit, no matter which Dean-O’s location you choose.  You’ll always be welcomed with a smile and will leave with a happy stomach!
