Wine Down Wednesday – Cajun Shrimp Bisque

I can’t get over this wonderful weather we’re having in South Louisiana!  I sat on my patio this afternoon and didn’t sweat the entire time.  Now that’s something!  In fact, I ended up putting on a light sweater.  Has fall finally graced Louisiana with its presence?

This chilly, breezy weather really had me craving a bowl of hot, creamy soup.  I stumbled upon this recipe for Cajun shrimp bisque, and I must say, I was not disappointed with my choice.  Now, I did add a bit more hot sauce than what’s called for, but, what can I say, that’s how we Cajuns like our food!  Pair it with an off-dry, sweet Riesling to counter the heat.

For the Shrimp Stock:

* 1 pound shrimp shells (shrimp to be saved for the bisque)
* 1/2 medium onion, sliced
* 1 tsp whole black peppercornscajun shrimp bisque
* 1 tsp coarse salt
* 2 dried bay leaves
* 1 Tbs. extra-virgin olive oil
* 2 Tbs. fresh parsley
* 6 cups water

For the Bisque:

* 1 pound reserved shrimp
* 4 Tbs. butter
* 1/2 medium onion, finely diced
* 2 celery stalks, finely diced
* 3 cloves garlic, minced
* 2 Tbs. all-purpose flour
* 2 Tbs. tomato paste
* 3 cups milk
* 2 cups shrimp stock
* 1 dried bay leaf
* 4 fresh basil leaves, torn
* 3 Tbs. hot sauce
* few pinches coarse salt
* 3 scallions, finely sliced

Bring the water to a boil and toss in all the stock ingredients. Boil for 20-30 minutes.  Strain stock into a bowl or container and discard the solids.  Melt the butter in a large skillet over medium-high.  Add the onions, celery and garlic. Sauté until soft, 5 minutes. Add the flour and tomato paste and toss to coat the veggies. Remove pan from the heat.  Stir in the milk and broth and whisk until combined. Add the bay leaf, torn basil and hot sauce. Put back on the heat and bring to a boil; reduce and simmer 10 minutes. Toss in some salt.  Add the shrimp and cook until they’re pink, 2 minutes.  Remove from heat and add the scallions.  Ladle up and serve with crackers!

Tech Tuesday – What to Do if You Lose Your Phone

We are becoming increasingly dependent on our smartphones.  From photos of our families to credit card information, lots of potentially sensitive information is saved to our phones; that’s a lot of trust to put into a piece of plastic and metal.  However, the fault usually lies not in the devices themselves but in our tendency to misplace those devices.  In addition, smartphones are also particularly appealing to thieves.  All it takes is a few moments of misplacement before your personal information falls into the wrong hands.

So is there anything we can do to keep our personal information safe even after the fact?  Of course!  This is the age of technology, people.  Our smartphones are equipped with smart software, which means we can still control our devices whether they’re in our possession or not.  Here is a primer on how to track and disable your smartphone if it goes missing.phone-security

1. FIRST, go into settings to enable the phone to back up your data and send you its location. If you have an iPhone, go to settings and tap iCloud. Turn on iCloud Backup, Find My iPhone and Send Last Location.

2. IF YOUR DEVICE GOES MISSING, you can then sign into iCloud.com or use the Find My iPhone app to see your device on a map, lock the device and place a message on the home screen with a contact number.

3. IF THE PHONE IS REALLY GONE, you can remotely protect the data by clicking the Erase iPhone button on iCloud or the Find My iPhone App. If you have backed up your phone in iCloud, you should be able to download all your information onto a replacement device.

4. FOR ANDROID PHONES, go into the device’s settings and then into security to activate the Android Device manager to track and erase a misplaced phone. If you are logged into your Google account, you can also type “find my phone” into a Google search box and see your phone on a map and make it ring, though you can’t lock or erase the phone.

It’s only human to lose things, but we don’t have to settle for losing our confidentiality if we can help it.  Knowing how to disable your smartphone if need be is crucial to protecting your personal information and can prevent much bigger problems from occurring if that information is compromised.  It’s better to be safe than sorry; be prepared for the possibility of phone theft, and when all else fails, hold on to that phone like your life depends on it!

Fear is often interpreted as a sign of weakness, which is severely misleading.  There’s nothing wrong with being afraid.  Fear can excite us and fuel our desire to try new things.  Only when we let our fears prevent us from succeeding does it become a problem.  

All that we want to achieve lies on the other side of fear.  Will you let that fear decide your fate, or will you stand up to it and show it who’s boss?

Eat Lafayette – Prejean’s

Since 1980, people from Lafayette and from around the world have been flocking to Prejean’s Restaurant.  Located in upper Lafayette, Prejean’s attracts hundreds of hungry customers from breakfast to dinner each day of the week. What exactly makes this restaurant such a hot commodity?  The award winning cuisine?  The historic Cajun decor and friendly atmosphere?  The promise of live, local music nightly?  If you’ve ever visited Prejean’s, you know that it’s all of the above!

When you walk into Prejean’s, you immediately notice its eccentric decor.  Spanish moss hangs from mock foliage.  A giant stained glass mural hangs behind the band stand.  A 14-foot alligator, a former native of the Grand Chenier swamp, looks over the dining room while guarding the restaurant’s collection of awards.

Speaking of the awards–Prejean’s has won more awards for its Cajun cuisine than any other restaurant in Louisiana! (Don’t believe me?  Here is a list.)  It’s no surprise, really, when you know who’s in the kitchen.  Chefs Ernest Prejean, Francheska Pierre, and Elise Arceneaux have collectively received dozens of awards for their culinary creations both at local and national levels.

But enough about awards–the food speaks for itself.  Prejean’s cuisine has been called “a Cajun seafood lover’s dream”, an accurate description, if I do say so myself!  Crawfish, crabs, and shrimp are the main components of most Prejean’s dishes, each of which is made with high quality ingredients and seasoned to perfection.

At Prejean’s, you can enjoy dinner and a show!  Every night, a local band plays festive Cajun music for the enjoyment of Prejean’s customers.

Prejean’s serves breakfast, lunch, and dinner, so you can get your Cajun fix no matter what time of the day it is.  At Prejean’s, you’re always given great service and great food.  If you’re visiting Lafayette, Prejean’s is definitely a must try!

International Rice Festival 2015

Louisiana’s oldest and largest agricultural festival is the International Rice Festival.  Each year, people from across the street and across the country gather in the small town of Crowley, Louisiana, to celebrate the economic and cultural importance of rice to our state.  It’s the main ingredient in many Cajun and Creole dishes.  It’s what grows on several hundred acres of farmland.  It’s Louisiana’s crop!

Interestingly enough, this large festival had quite small beginnings.  In 1927, the first of only two Rice Carnivals was held in Crowley in conjunction with Armistice celebrations.  After 1928, the Rice Carnival was discontinued.  It wasn’t until 1937, a decade after the first Carnival, that the Rice Festival was introduced to Acadia Parish.  The very first Rice Festival was held on October 5, combined with Crowley’s Golden Jubilee.  Needless to say, the festival was a huge success, drawing nearly 35,000 attendees.

Since then, the Rice Festival has only continued to grow.  The festival now attracts as many as 125,000 people per year, with millions of people having attended since its inception.  It’s still held on Parkerson Avenue downtown, yet it seems that new features are introduced each year.

Today, the Rice Festival is a four-day long celebration full of music, dancing, food, and fun for the whole family. Highlights of the festival include two music stages populated with Louisiana’s best local musicians, a seemingly endless chain of booths serving up delicious Cajun food, two parades leading rice covered floats down Parkerson, a huge section full of carnival rides and games for the kids, contests, cook offs, crownings, crafts, and a car show.

The 78th annual Rice Festival is going on right now, but there’s still plenty of fun to be had!  Don’t miss live performances by Wayne Toups tonight and Charlie Daniels tomorrow night; and be sure to come on an empty stomach and have lots of energy for dancing!
